Week 2 of Full of Potatoes, shed 2lbs

Week two seemed to fly by. I remember feeling good about losing 5lbs. My energy level jumped up this week, however my mood was pissy in the beginning of the week. I remember being extremely irritated with my husband Shal. I think a lot of emotions and feelings were coming up that I usually buried away with food. By the end of week two I was feeling great though, balanced and calm. The longer I do this the easier it seems to be getting. I still think not using oil and very little sugar is the way to go with losing fat and why this has been so successful.
My go to meals are potato fries, hash browns, baked potatoes and mashed potatoes. Even though I have to cook all my meals I feel like my mind if freed up for things not related to food. Speaking of my mind, it is becoming so much clearer. I used to feel really foggy, brain fog I guess it's called. My mind is much sharper now, no more feeling like a zombie!
The cravings are almost completely gone. I'm beginning to realize that I will have to say oil free when I resume my Whole Foods plant based diet. I will most likely stay away from wheat as well, rice has never bothered me but I always felt like I ate a brick when I would eat a sandwich or pasta made from wheat.
These are sweet potatoes I baked in the oven with a little brown sugar sprinkled on them.
